A giant cookie for one? Our delicious choc-chip cookie recipe is perfect for those nights when you’re craving a quick and easy sweet treat. It’s a single-serve of gooey chocolate chip goodness and it seriously hits the spot.

Even better still, this cookie recipe is 100% plant-based and you wouldn’t know the difference! Top with our vegan Salted Caramel & Sunshine gelato to take it to a whole other level.

Easy Vegan Cookie Recipe


1/2 cup plain flour

1 tbsp sugar

1/4 tsp baking powder

1/4 tsp baking soda

Pinch of salt

1 tbsp maple syrup

1 tbsp vegan butter (measured solid then melt)

2 tbsp vegan milk

1 scoop of Good Vibes Salted Caramel & Sunshine gelato (Vegan) or Good Vibes Salted Caramel Swirl (Dairy)

1 tbsp vegan caramel sauce


  1. Preheat the oven to 180 degrees.

  2. Combine all of the dry ingredients in a bowl and mix together being careful not to over-mix the mixture.

  3. Pour the mixture into an oven-safe dish or skillet and bake in the oven for 12 minutes.

  4. Top with some creamy Good Vibes Salted Caramel & Sunshine gelato and a drizzle of a plant-based caramel sauce. Add a sprinkle of flaked sea salt on top to take it to another level.

Serves 1 | Preparation time: 5 minutes | Bake time: 12 minutes
